Thai Braised Oxtail
A rich and flavorful Thai-inspired oxtail dish, perfect for a late-night craving.
Ingredients
- β2 pounds oxtailcut into 2-inch pieces
- β2 tablespoons midnight bean pasteavailable at Asian markets
- β2 tablespoons prik nam plaThai fish sauce
- β1 can coconut milkfull-fat
- β2 tablespoons brown sugar
- β1 tablespoon fish sauce
- β2 tablespoons vegetable oil
- β3 cloves garlicminced
- β2 shallotsminced
- β1 bunch Thai basilchopped

Heat oil in a large Dutch oven over medium-high heat.

Brown the oxtail in batches, then set aside.

Add more oil if necessary, then sautΓ© the garlic and shallots until fragrant.

Add the bean paste, fish sauce, and brown sugar; stir to combine.

Return the oxtail to the pot, cover, and transfer to the oven.

Braise for 2 1/2 hours, or until the meat is tender.

Stir in the coconut milk and Thai basil; cook for an additional 10 minutes.
