Midnight Russian Pierogi
A traditional Russian dish filled with a savory potato and cheese mixture, perfect for a late-night snack.
Ingredients
- β2 large Potatoes
- β1 cup Ricotta cheese
- β1/2 cup Cheddar cheese
- β1 medium Onion
- β1/4 cup Parsley
- βto taste Salt
- βhomemade or store-bought Pierogi dough
- β2 tablespoons Butter
Instructions

Bring a large pot of salted water to a boil.

Roll out the pierogi dough to a thickness of about 1/8 inch.

Use a round cookie cutter or the rim of a glass to cut out circles of dough.

Place a tablespoon of the potato and cheese mixture in the center of each dough circle.

Fold the dough over the filling and press the edges together to seal the pierogi.

Drop the pierogi into the boiling water and cook for 5-7 minutes, or until they float to the surface.

Remove the pierogi from the water with a slotted spoon and drain off any excess water.

Serve the pierogi hot with melted butter and chopped parsley.
