Australian Christmas Pudding Fritters
A sweet and indulgent dessert perfect for Christmas, these fritters are made with shredded Christmas pudding and served hot with a drizzle of maple syrup.
Ingredients
- β250g Shredded Christmas Pudding
- β1 cup All-purpose Flour
- β1/2 cup Breadcrumbs
- β2 EggsBeaten
- β1/2 cup Granulated Sugar
- β1 tsp Vanilla Essence
- βfor frying Vegetable Oil
- βfor serving Maple Syrup

In a large bowl, combine the shredded Christmas pudding, flour, breadcrumbs, eggs, sugar, and vanilla essence. Mix well to combine.

Heat a non-stick frying pan with about 1-2 cm of vegetable oil over medium heat.

Using a spoon, drop small amounts of the mixture into the hot oil, flattening slightly with a spatula.

Cook for 2-3 minutes on each side, or until golden brown and crispy.

Remove the fritters from the oil and place on a paper towel-lined plate to drain excess oil.
