Monsoon Chuck Chili
A hearty, spicy chili made with ground chuck and a blend of warm spices. Perfect for a cold night.
Ingredients

- β1 medium oniondiced
- β3 cloves garlicminced
- β2 tsp cuminground
- β1 tsp chili powderground
- β1 tsp paprikaground
- β14.5 oz diced tomatoescanned
- β2 chipotle peppers in adobo saucecanned

Brown the ground chuck in a large pot over medium-high heat, breaking it up into small pieces as it cooks.

Once the meat is browned, add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Stir in the cumin, chili powder, and paprika. Cook for 1-2 minutes, until fragrant.

Add the diced tomatoes and chipotle peppers. Stir to combine.

Bring the mixture to a simmer, then reduce the heat to low and let cook for 20-30 minutes.
