Jamaican Pork Stew
A flavorful and aromatic stew made with tender pork, a blend of Jamaican spices, and a hint of sweetness.

- β2 tablespoons Jamaican jerk seasoningStore-bought or homemade
- β1 large, chopped Onion
- β3 cloves, minced Garlic
- β1 large, chopped Bell pepperAny color
- β2 tablespoons Tomato paste
- β2 tablespoons Melting chocolate
- β1 teaspoon, ground Allspice
- β1 teaspoon, fresh or dried Thyme

Heat oil in a large Dutch oven over medium-high heat.

Brown the pork cubes in batches until browned on all sides, about 5 minutes. Remove from heat and set aside.

Reduce heat to medium and add the chopped onion to the pot. Cook, stirring occasionally, until the onion is softened and lightly browned, about 8 minutes.

Add the minced garlic and cook for 1 minute, stirring constantly to prevent burning.

Add the chopped bell pepper and cook for an additional 2 minutes.

Add the browned pork back to the pot, along with the jerk seasoning, tomato paste, allspice, and thyme. Stir to combine.

Add the chopped tomatoes, brown sugar, and melting chocolate to the pot. Stir to combine.

Bring the stew to a simmer, then cover the pot and transfer it to the oven.

Bake for 20-25 minutes or until the pork is tender, the sauce has thickened, and the flavors have melded together.
