Jamaican Tofu Frittata
A spicy Jamaican twist on the classic Italian dish, featuring tofu and a hint of Caribbean flavor.
Ingredients
- β1 block (12 oz) tofufirm, drained and cubed
- β1 cup melted cheeseshredded
- β1 tsp Jamaican seasoningstore-bought or homemade
- β1 medium oniondiced
- β1 medium bell pepperdiced
- β6 eggbeaten
- β1/2 tsp salt
- β1/4 tsp black pepper

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 1 tablespoon of oil over medium-high heat.

Add the onion and bell pepper and cook until tender, about 5 minutes.

Add the Jamaican seasoning and cook for 1 minute.

In a large bowl, whisk together the eggs, salt, and black pepper.

Add the tofu, melted cheese, and cooked onion and bell pepper mixture to the bowl and stir to combine.
