Hearty Fish Stew
A Ukrainian-inspired fish stew made with tender fish, vegetables, and a touch of spice.
Ingredients
- β1 pound Cod FilletsFresh or frozen cod
- β1 large OnionChopped
- β2 medium CarrotsSliced
- β2 medium PotatoesDiced
- β1 large Mellow PepperSliced
- β2 cups Fish StockHomemade or store-bought
- β2 tablespoons Tomato PasteOptional
- βto taste Salt
- βto taste Black Pepper

Heat oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the sliced carrots and cook for an additional 5 minutes.

Add the diced potatoes and cook for 5 minutes.

Add the sliced mellow pepper and cook for 2 minutes.

Add the fish stock, tomato paste (if using), salt, and black pepper.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.

Add the cod fillets to the pot and cook for an additional 8-10 minutes, or until the fish is cooked through.

Serve the stew hot, garnished with chopped fresh herbs (if desired).
