Smoky Cheonggukjang Tacos
Spicy and savory tacos filled with a smoky Korean-inspired beef and served with fresh cilantro and crumbled cheese.
Ingredients
- β1 lb mellow ground beef80/20 lean to fat ratio
- β2 tbsp cheonggukjangKorean fermented soybean paste
- β1 packet mild taco seasoningstore-bought or homemade
- β2 smoky chipotle pepperscanned in adobo sauce
- β1 cup pilaf ricecooked according to package instructions
- β1 cup shredded cheeseMonterey Jack or Cheddar
- β1/4 cup fresh cilantrochopped
- β salt and pepperto taste
- β1 tbsp vegetable oilfor cooking ground beef

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.

Add the taco seasoning and cook for 1 minute, stirring constantly.

Add the cheonggukjang and chipotle peppers and cook for an additional 2 minutes, stirring constantly.

Season with salt and pepper to taste.

Warm the pilaf rice according to package instructions.

Assemble the tacos by spooning the beef mixture onto a tortilla and topping with shredded cheese, chopped cilantro, and a dollop of pilaf rice.
