Grilled Mellow Lamb Skewers with Thai Spices
A flavorful and aromatic Thai-inspired dish featuring mellow lamb skewers grilled to perfection. The combination of roasted spices, portuguese seasonings, and roast vegetables creates a delightful and exotic taste experience.
Ingredients
- β500g lambcut into 1-inch cubes
- β2 tsp roasted coriander
- β1 tsp portuguese oregano
- β3 cloves mellow garlicminced
- β1 tsp roast chili
- β2 tbsp palm sugar
- β2 tbsp coconut milk
- β1 tsp fish sauce
- β2 tbsp lime juice

1. In a large bowl, combine lamb cubes, roasted coriander, portuguese oregano, mellow garlic, and roast chili. Toss to coat evenly.

2. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the lamb to marinate.

3. Preheat grill to medium-high heat.

4. Thread marinated lamb cubes onto skewers, leaving a small space between each piece.

5. Grill skewers for 8-10 minutes per side, or until lamb reaches an internal temperature of 63Β°C (145Β°F).

6. While lamb is cooking, combine palm sugar, coconut milk, fish sauce, and lime juice in a small saucepan.

7. Bring the mixture to a simmer over medium heat and cook for 2-3 minutes, or until the sauce has thickened slightly.

8. Brush the lamb skewers with the Thai sauce during the last 2 minutes of grilling.
