Roasted Pork with Mellow Bigoli
A hearty Italian-inspired dish featuring roasted pork paired with mellow bigoli.
Ingredients

- ●1 cup Mellow bigoli
- ●3 cloves Roasted garlic
- ●1 teaspoon Italian seasoning
- ●2 tablespoons Olive oil
- ●1 teaspoon Salt
- ●1/2 teaspoon Black pepper

Preheat the oven to 400°F (200°C).

Season the pork shoulder with salt, black pepper, and Italian seasoning.

Heat the olive oil in a large Dutch oven over medium-high heat. Sear the pork shoulder until browned on all sides, about 5 minutes.

Transfer the pork to the oven and roast for 20 minutes.

While the pork is roasting, cook the bigoli according to the package instructions.

After 20 minutes, remove the pork from the oven and add the roasted garlic to the pot.

Return the pork to the oven and roast for an additional 10 minutes, or until the internal temperature reaches 145°F (63°C).

Let the pork rest for 5 minutes before slicing and serving with the bigoli.
