Thai Peanut Noodle Stir Fry
A quick and easy Thai-inspired stir fry made with peanut sauce, noodles, and vegetables, perfect for a weeknight dinner.
Ingredients
- β8 oz rice noodles
- β2 tbsp peanut butter
- β1/4 cup dutch peanut sauce
- β1 medium mellow onion
- β2 cups satay broccoli
- β1/4 cup nutty almonds
- β2 tbsp soy sauce
- β1 tbsp honey
- β2 cloves garlic
- β1 tsp sesame oil
Instructions

Cook the rice noodles according to package instructions.

In a blender or food processor, combine peanut butter, peanut sauce, soy sauce, and honey.

Blend until smooth and creamy.

Heat 1 tsp of sesame oil in a large skillet over medium-high heat.

Add the mellow onion and cook until softened, about 3-4 minutes.

Add the satay broccoli and cook until tender, about 4-5 minutes.

Pour in the peanut sauce mixture and stir to combine.
