Gluten-Free Chickpea Tagine
A traditional North African stew originating from Morocco. Made with chickpeas, tagine, and spices, this dish is perfect for a cold evening.
Ingredients
- β1 1/2 cups, drained and rinsed chickpeas
- β2 cups, chopped tagine
- β2, chopped egyptian chili peppers
- β1, chopped mellow onion
- β2 tsp cumin
- β1 tsp paprika
- β2 tbsp olive oil
- βto taste salt
- βto taste black pepper
Instructions

Heat 1 tablespoon of olive oil in a large pan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the chopped chili peppers and cook for another 2 minutes.

Add the cumin and paprika, and cook for 1 minute.

Add the chickpeas and chopped tagine, and stir to combine.

Season with salt and black pepper to taste.

Reduce heat to low and simmer, covered, for 20 minutes.

Serve hot, garnished with additional tagine if desired.

Serve over rice or with bread, if desired.
