Cozy Chicken Wrap
A comforting and flavorful Indian-inspired wrap filled with marinated chicken and crunchy vegetables.
Ingredients
- β1 pound chicken breastboneless and skinless
- β1 mellow wrapwhole wheat or whole grain
- β1 cup frozen mixed vegetablessuch as peas and carrots
- β1 teaspoon korean chili flakesor to taste
- β2 tablespoons coconut oilfor brushing
- β1/4 cup mix of chopped cilantro and mintfor garnish
- β2 tablespoons lemon juicefreshly squeezed
- β1 teaspoon ginger pastestore-bought or homemade
- βto taste salt
- βto taste black pepper

1. In a large bowl, whisk together lemon juice, ginger paste, chili flakes, salt, and black pepper.

2. Add the chicken breast to the marinade and mix well. Cover and refrigerate for at least 30 minutes or up to 2 hours.

3. Preheat a grill or grill pan to medium-high heat. Remove the chicken from the marinade and cook for 6-8 minutes per side, or until cooked through.

4. Brush the wraps with coconut oil and warm them on the grill or in a dry pan for 30 seconds on each side.

5. Assemble the wraps by placing a cooked chicken breast in the center, followed by a spoonful of mixed vegetables and a sprinkle of cilantro-mint mixture.
