Goose Udon Noodle Bowl (Hanakara)
A Japanese-inspired dish originating from the Eastern region, utilizing goose meat and a variety of medicinal herbs to create a soothing, hangover-reducing meal.
Ingredients
- β250g Goose meatCooked to 74Β°C
- β200g Udon noodlesBoiled al dente
- β2 tbsp Miso pasteDiluted in 2 cups hot water
- β2 in GingerThinly sliced
- β4 in ScallionsThinly sliced
- β1 tbsp Sesame oilFor garnish
- β1/4 cup Chopped green onionsFor garnish
- β1 tsp Medicinal herbs (dried)Optional, to aid in hangover relief
- β1 tsp Middle eastern spices (dried)For added flavor

Cook the goose meat to 74Β°C.

Boil the Udon noodles in salted water until al dente.

Prepare the miso paste by dissolving it in 2 cups of hot water.

Sear the ginger slices in sesame oil until caramelized.

Combine cooked goose meat, Udon noodles, miso broth, sesame oil, ginger, and scallions in a bowl.

Sprinkle chopped green onions and medicinal herbs (if using) over the top.
