Massaman Pork Curry
A flavorful and aromatic curry made with massaman curry paste, pork, and australian ingredients. A perfect dish for special occasions.
Ingredients
- β2 tablespoons Massaman Curry Paste
- β1 pound Pork Shouldercut into 1-inch cubes
- β2 medium Australian Sweet Potatoespeeled and cut into 1-inch cubes
- β1 can (14 ounce) Mellow Coconut Milkfull-fat
- β2 tablespoons Mellow Fish Sauceoptional
- β2 stalks Australian Lemongrasscut into 1-inch pieces
- β2 inches Australian Galangalpeeled and sliced
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper
- β2 Australian Lime Wedgesfor serving

1. Heat oil in a large saucepan over medium heat.

2. Add lemongrass and galangal; cook, stirring occasionally, until fragrant, about 5 minutes.

3. Add curry paste; cook, stirring constantly, for 1 minute.

4. Add pork; cook, stirring occasionally, until browned, about 5 minutes.

5. Add sweet potatoes; cook, stirring occasionally, until slightly tender, about 5 minutes.

6. Pour in coconut milk; bring to a simmer.

7. Reduce heat to low; cook, stirring occasionally, until pork is tender and sauce has thickened, about 20 minutes.
