Jamaican Chicken Kebabs
Tender marinated chicken grilled to perfection on skewers with a delicious Caribbean twist.
Ingredients
- β1 1/2 pounds Chicken breastCut into 1-inch cubes
- β2 tablespoons Marinated chicken seasoningHomemade or store-bought
- β1 tablespoon Jamaican jerk seasoningAdjust to taste
- β2 tablespoons Lime juiceFreshly squeezed
- β1 tablespoon HoneyOptional
- β1/4 cup Vegetable oilFor brushing skewers
- β1 large OnionsCut into 1-inch pieces
- β2 large Bell peppersCut into 1-inch pieces
- β1 large ZucchiniCut into 1-inch slices

Preheat grill to medium-high heat.

Thread chicken, onions, bell peppers, and zucchini onto skewers.

In a small bowl, mix together marinated chicken seasoning, Jamaican jerk seasoning, lime juice, and honey (if using).

Brush the skewers with the marinade, making sure all the ingredients are coated.

Place the skewers on the grill and cook for 8-10 minutes, turning occasionally.

Brush with vegetable oil during the last 2 minutes of cooking.
