Kenyan Lamb Stew
A hearty and flavorful stew from Kenya, featuring tender lamb and aromatic spices. Serve with a side of crusty bread or over rice for a satisfying meal.
Ingredients
- β1.5 pounds Lamb shoulder
- β1 medium Onion
- β3 cloves Garlic
- β2 inches Ginger
- β2 cups Tomatoes
- β1 cup Coconut milk
- β2 teaspoons Curry powder
- β1 teaspoon Cumin
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat oil in a large Dutch oven over medium-high heat.

Sear the lamb shoulder until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Add the tomatoes, curry powder, cumin, salt, and black pepper. Stir to combine.
