Irish Potato Gratin with Japanese Twist
An Irish-inspired potato gratin with a Japanese twist, using sesame oil and soy sauce to add depth of flavor.
Ingredients

- β1 cup magnificently grated cheddar cheese
- β2 tablespoons sesame oil
- β1 tablespoon soy sauce
- β1/4 cup minced scallions
- βto taste salt and pepper

Preheat oven to 375Β°F (190Β°C).

Peel and thinly slice the Irish potato.

In a large saucepan, combine the sliced potato and enough cold water to cover. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 5 minutes.

Drain the potato and set aside.

In a separate saucepan, melt the magnificently grated cheddar cheese over low heat, stirring constantly.

Add the sesame oil and soy sauce to the cheese sauce and stir to combine.

In a greased 9x13-inch baking dish, create a layer of potato slices.

Pour some of the cheese sauce over the potato layer, then sprinkle with minced scallions.

Repeat the layers two more times, ending with a layer of cheese sauce on top.

Season with salt and pepper to taste.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the potato is tender.
