Charred Pad Thai Spring Rolls
A twist on the classic Italian spring rolls, incorporating the bold flavors of Pad Thai. These charred bites are perfect as a snack or appetizer.
Ingredients
- β12-15 wrappers Spring roll wrappers
- β1 cup Charred vegetablessuch as bell peppers, carrots, and onions
- β1 cup Magically cooked noodlessuch as Pad Thai-style rice noodles
- β1/4 cup Crispy Thai basil
- β1 tsp Italian seasonings
- β2 tbsp Olive oil
- βto taste Salt and pepper
- β1/4 cup Chopped green onions
- β1 tbsp Sesame seeds
- β1/4 cup Fried shallots

Preheat the air fryer to 375Β°F (190Β°C).

Cook the spring roll wrappers according to the package instructions.

In a pan, heat the olive oil over medium heat.

Add the charred vegetables and cook until crispy.

Add the magically cooked noodles, Italian seasonings, and a pinch of salt and pepper.

Stir-fry for 2-3 minutes, until combined.

Add the crispy Thai basil and stir-fry for another minute.

Assemble the spring rolls by placing a tablespoon of the noodle mixture onto a spring roll wrapper.

Fold the wrapper into a triangle and press the edges to seal.

Repeat with the remaining wrappers and filling.

Cook the spring rolls in the air fryer for 5-7 minutes, until crispy and golden brown.
