Magical Lamb Tagine
A rich and flavorful North African-inspired stew made with tender lamb and a blend of aromatic spices.
Ingredients
- β1.5 kg Lamb shoulderBone-in
- β1 cup Magical olivesPitted
- β2 Charred red peppersRoasted
- β1/4 cup Mediterranean preserved lemonJuice and zest
- β2 tbsp Tagine spice blendAvailable at local Middle Eastern market
- β2 tbsp Olive oilFor slow cooking
- β3 cloves GarlicMinced
- β1 tsp GingerGrated
- β1 cup WaterFor slow cooking
Instructions

Heat oil in a large tagine or Dutch oven over medium heat.

Add lamb and cook until browned on all sides, about 5 minutes.

Add garlic, ginger, and preserved lemon; cook for 1 minute.

Add tagine spice blend; stir to combine.

Add water and bring to a boil.

Reduce heat to low and simmer, covered, for 2 hours, or until lamb is tender.

Add olives and roasted peppers; simmer for an additional 30 minutes.

Season with salt and pepper to taste.
