Ethiopian-Style Lentil Stew with Flatbread
A hearty and flavorful Ethiopian-inspired stew made with lentils, served with a side of crispy flatbread.
Ingredients

- β2 cloves garlicminced
- β1-inch piece gingergrated
- β2 tablespoons tomato pastedried
- β2 cups vegetable brothlow-sodium
- β4-6 pieces flatbreadstore-bought or homemade
- β2 tablespoons niter kibbehEthiopian clarified butter

Heat the niter kibbeh in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for an additional minute.

Stir in the tomato paste and cook for 1-2 minutes.

Add the lentils, vegetable broth, and spices. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes.
