Luxuriant Chicken Tagine
A flavorful and aromatic North African-inspired dish featuring chicken cooked in a rich and spicy tagine sauce.
Ingredients
- β1 1/2 pounds (680g) Chicken thighsBone-in for extra flavor
- β2 tablespoons (30ml) Luxuriant olive oil
- β1 cup (240ml) Australian lamb or beef stock
- β1 cup (240ml) Chicken broth
- β1 medium (about 1 pound 100g) OnionChopped
- β2 teaspoons Cumin
- β1 teaspoon Coriander
- β1 tablespoon (15g) GingerGrated
- β3 cloves GarlicMinced
- β1/4 teaspoon Cayenne pepper

Heat the olive oil in a large clay or ceramic tagine over medium-high heat.

Add the onion and cook until softened, about 5 minutes.

Add the cumin, coriander, ginger, garlic, and cayenne pepper. Cook for 1 minute, stirring constantly.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the lamb or beef stock, chicken broth, and bring to a boil.

Cover the tagine and transfer it to the preheated oven.

Bake at 300Β°F (150Β°C) for 30-40 minutes, or until the chicken is cooked through and the sauce has thickened.
