Thai Kebab Lamb Skewers

In a blender or food processor, combine Thai red curry paste, fish sauce, brown sugar, lemon juice, vegetable oil, minced garlic, and ground cumin. Blend until smooth.

In a large bowl, whisk together the marinade and coconut milk (if using). Add the lamb cubes and mix until they are evenly coated.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat grill to medium-high heat. Thread the marinated lamb onto skewers, leaving a small space between each piece.
