Keto Spanish Paella with Cherry Glaze
A keto twist on the classic Spanish dish, featuring a sweet and sticky cherry glaze. This recipe is perfect for a low-carb dinner.
Ingredients

- β1 Spanish Sausage
- β2 cups Glace Chicken Broth
- β1/4 cup Cherry Jam
- β1 cup Paella Rice Substitute (cauliflower rice)
- β2 tbsp Olive Oil
- βto taste Salt
- βto taste Pepper

Heat the olive oil in a large paella pan over medium-high heat.

Add the Spanish sausage and cook until browned, about 2-3 minutes.

Add the chicken thighs and cook until browned, about 2-3 minutes.

Add the cauliflower rice and cook until lightly toasted, about 3-4 minutes.

Add the glace chicken broth and bring to a simmer.

Reduce heat to medium-low and cook, covered, for 10-12 minutes or until the liquid has been absorbed.

While the paella is cooking, mix the cherry jam with 1 tablespoon of water to thin it out.
