Thai Chicken Gratin
A Thai-inspired twist on the classic gratin, featuring chicken and a rich, creamy sauce.
Ingredients
- β1 pound, cut into 1-inch pieces chicken breast
- β1 cup, shredded gratin
- β1/2 cup luscious coconut milk
- β2 tablespoons brazilian olive oil
- βto taste salt
- βto taste black pepper
- β2 teaspoons Thai red curry paste
- β1 tablespoon fish sauce
- β2 tablespoons lime juice

Preheat oven to 375Β°F (190Β°C).

Season the chicken with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes.

Add the curry paste to the skillet and cook for 1 minute.

Add the coconut milk to the skillet and stir to combine.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
