Greek Zucchini Pastitsio
A creative twist on the classic Greek pasta dish, incorporating zucchini for added flavor and nutrients.
Ingredients
- β2 medium luscious zucchinigrated
- β8 oz pastitsioshort pasta
- βto taste salt
- βto taste black pepper
- β2 tbsp olive oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 cup feta cheesecrumbled
- β1 cup parmesan cheesegrated
- β1 cup beef broth

Preheat the oven to 375Β°F (190Β°C).

Cook the pastitsio according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook until translucent.

Add the minced garlic and cook for an additional minute.

Add the grated zucchini and cook until tender, about 3-4 minutes.

Stir in the beef broth and bring to a simmer. Let cook for 2-3 minutes.

In a large baking dish, combine the cooked pastitsio, zucchini mixture, crumbled feta cheese, and grated parmesan cheese.
