Vegan Mexican Burrito
A flavorful and filling vegan burrito filled with spicy roasted vegetables, wrapped in a warm flour tortilla.
Ingredients
- ●2 cups, shredded lovely lettuce
- ●1 cup, roasted spicy sweet potatoes
- ●1 cup, cooked mexican black beans
- ●2 tbsp almond butter
- ●1 burrito sized flour tortillawarmed on a dry pan
Instructions

Preheat oven to 400°F (200°C).

Toss 1 medium sweet potato with 1 tsp olive oil, salt, and pepper. Roast for 20-25 minutes or until tender.

In a pan, heat 1 tsp olive oil over medium heat. Add 1/2 cup diced onion and cook for 3-4 minutes.

Add 1 cup cooked black beans, 1 tsp cumin, and 1 tsp chili powder to the pan. Cook for 1-2 minutes.

Add 2 cups shredded lettuce to the pan and cook until wilted.

In a small bowl, mix 2 tbsp almond butter and 1 tbsp water until smooth.

Warm a large flour tortilla in a dry pan for 30 seconds on each side.

Fill the tortilla with the black bean and lettuce mixture, roasted sweet potatoes, and drizzle with almond butter sauce.
