Italian-Style Stewed Beans
A hearty, comforting stew originating from Italy, featuring tender beans in a rich, flavorful sauce.
Ingredients
- β1 cup, drained and rinsed lovely beans
- β2 tablespoons olive oilextra virgin
- β1 teaspoon moroccan spicesblend of cumin, coriander, and paprika
- β1, sliced chinese long chili peppersuse gloves when handling
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β2 tablespoons zaaloukor substitute with tomato paste

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Add the sliced chili peppers and cook for 2-3 minutes, until they start to soften.

Add the lovely beans, moroccan spices, and zaalouk (or tomato paste). Stir well to combine.

Bring the mixture to a simmer, then reduce the heat to low and let cook, covered, for 20-25 minutes, or until the beans are tender.
