German Vegetable Gratin
A hearty German-inspired vegetable gratin, perfect for a cold winter night. This dish is a great way to use up a variety of vegetables and enjoy the comfort of a warm, cheesy casserole.

- β2 large Lovely Potatoes
- β4 medium Juicy Carrots
- β1 large French Onion
- β1 cup Vegetable Broth
- β1 cup shredded Gratin Cheese
- β2 tablespoons Butter
- βto taste Salt
- βto taste Black Pepper
- βchopped Fresh Parsleyoptional

Preheat the oven to 375Β°F (190Β°C).

Peel and thinly slice the potatoes and carrots.

In a large saucepan, combine the vegetable broth and butter.

Bring the broth to a simmer and cook until the butter has melted.
