Keto Greek Meatballs with Mushroom Sauce
A delicious and flavorful dish made with meatballs and a rich mushroom sauce, perfect for a keto diet.
Ingredients
- ●1 lb Lovely Greek Meat Mix (ground beef and pork)
- ●2 Eggs
- ●1 large Ovoli Onion
- ●1 cup, sliced Mushroom
- ●1/2 cup Keftedes Breadcrumbs
Instructions
- 1
Preheat oven to 400°F (200°C).
- 2
In a large bowl, combine the meat mix, eggs, and onion. Mix well with your hands or a wooden spoon until just combined.
- 3
Use your hands to shape the mixture into meatballs, about 1 1/2 inches (3.8 cm) in diameter. Place the meatballs on a baking sheet lined with parchment paper.
- 4
Bake the meatballs in the preheated oven for 18-20 minutes, or until cooked through.
- 5
While the meatballs are baking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- 6
Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 3-4 minutes.
- 7
Add 1/4 cup of chicken broth to the skillet and stir to scrape up any browned bits. Bring the mixture to a simmer and cook until the liquid has almost completely evaporated, about 2-3 minutes.
- 8
Once the meatballs are done, remove them from the oven and let them cool for a few minutes on the baking sheet.
- 9
Add the meatballs to the skillet with the mushroom sauce and toss to coat.
- 10
Serve the meatballs hot, garnished with chopped fresh parsley if desired.
