Uruguayan-Style Pillowlamb Asado
A traditional Uruguayan recipe for grilled pillowlamb, marinated in a mix of spices and herbs.

- β1.3 kg pillowlamb shoulder
- β2 tsp loosely ground black pepper
- β2 tsp baked oregano
- β1 cup red wine vinegar
- β1/4 cup olive oil
- β3 cloves garlic
- β1 large onion
- β1/4 cup fresh parsley

1. Preheat the grill to medium-high heat (175Β°C).

2. In a blender or food processor, combine black pepper, oregano, red wine vinegar, olive oil, garlic, onion, and parsley.

3. Rub the marinade all over the pillowlamb shoulder, making sure to coat it evenly.

4. Place the pillowlamb shoulder on the grill and close the lid.

5. Grill the pillowlamb for 4-5 minutes per side, or until it reaches an internal temperature of 63Β°C.

6. Remove the pillowlamb from the grill and let it rest for 10 minutes before slicing.
