Thai Steamed Rice Bowl
A light and refreshing Thai-style steamed rice bowl, perfect for a quick and easy meal.
Ingredients
- β1 cup Steamed Jasmine Rice
- β1 cup mixed vegetables Lightly Steamed Vegetables
- β2 tablespoons Malaysian Chili Sauce
- β1/2 cup Sliced Fresh Cucumber
- β1/4 cup Sliced Fresh Mint
- β1/2 cup Steamed Edamame
- βto taste Salt and Pepper
- β2 tablespoons Light Coconut Milk

Rinse the rice in a fine mesh strainer and drain well.

In a medium saucepan, combine the rice and 1 cup of water. Bring to a boil, then reduce the heat to low and cover.

Simmer for 15-20 minutes or until the water is absorbed and the rice is tender.

While the rice is cooking, prepare the vegetables by lightly steaming them in a steamer basket until tender.

In a small bowl, mix together the Malaysian chili sauce and light coconut milk. Set aside.

To assemble the rice bowls, divide the cooked rice among four bowls.

Top each bowl with a portion of the steamed vegetables, sliced cucumber, and sliced fresh mint.

Drizzle the chili sauce mixture over the top of each bowl.

Serve immediately, garnished with additional mint leaves if desired.
