Steamed Australian Prawns in Khus Broth
A light and refreshing French-inspired prawn dish, served in a khus broth. Perfect for a warm evening.

- β1 kg Australian prawns (12)
- β2 bunches Khus grass
- β2 cups Lightly steamed water
- β1 tsp Saltto taste
- β1 tsp Black pepperto taste
- β1/4 cup Fresh parsleychopped
- β4 Lemon wedges
- β1 Bowlfor serving

1. Rinse the prawns under cold water and pat dry with paper towels.

2. In a large bowl, combine the khus grass, lightly steamed water, salt, and black pepper. Stir well to combine.

3. Bring the khus broth to a simmer over medium heat.

4. Add the prawns to the khus broth and cook for 3-4 minutes, or until they are pink and cooked through.

5. Remove the prawns from the broth with a slotted spoon and place on a plate.

6. Strain the khus broth through a fine-mesh sieve into a clean bowl, discarding the solids.

7. Serve the prawns in the khus broth, garnished with chopped parsley and lemon wedges.
