Tunisian Spiced Couscous Bowl
A flavorful and healthy bowl filled with the spices of Tunisia, all plant-based and vegan-friendly. A perfect meal for a warm evening.
Ingredients
- β1 cup Couscouspreferably whole wheat
- β1 cup Tunisian Spiced Pilaf Mixsee notes
- β2 cups Cherry Tomatoeshalved
- β2 Roasted Red Peppersdiced
- β1/4 cup Olivespitted and sliced
- β1/4 cup Fresh Parsleychopped
- β2 tablespoons Lemon Juicefreshly squeezed
- β2 tablespoons Olive Oilfor cooking
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the Tunisian Spiced Pilaf Mix and cook, stirring frequently, for 5 minutes.

Add the cherry tomatoes, roasted red peppers, and olives. Stir to combine.

Add 2 cups of water and bring to a boil.

Reduce heat to low and simmer for 20-25 minutes, or until the couscous is cooked.

Fluff the couscous with a fork and stir in the chopped parsley and lemon juice.
