Lamb Rogan Josh
A classic Indian dish made with tender lamb, rich spices, and a flavorful sauce.
Ingredients
- β1 kg, cut into 2-inch pieces lamb shoulder
- β2 medium, thinly sliced onionlighty spiced
- β3 cloves, minced garlic
- β1-inch piece, grated ginger
- β2 tbsp gheeor vegetable oil
- β1 tsp, ground cumin
- β1 tsp, ground coriander
- β1/2 tsp cayenne pepper
- β1 tsp salt
- β2 tbsp rogn josh spice blend
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add the lamb and cook until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Add the sliced onion to the pot and cook until it starts to brown, about 5 minutes.

Add the minced garlic and grated ginger to the pot and cook for 1 minute.

Stir in the cumin, coriander, cayenne pepper, and salt. Cook for 1 minute.

Add the browned lamb back to the pot, along with the rogn josh spice blend and 1 cup of water.

Bring the mixture to a boil, then cover the pot and transfer it to the oven.

Bake at 300Β°F (150Β°C) for 2 1/2 hours, or until the lamb is tender and the sauce has thickened.

Remove the pot from the oven and let it cool slightly.

Serve the lamb and sauce over basmati rice or with naan bread.
