Saffron Semolina Pilaf
A flavorful and aromatic Indian-inspired pilaf dish, infused with saffron and served with lightly simmered vegetables.
Ingredients
- ●1 cup Semolina
- ●2 tablespoons Ghee or vegetable oiluse ghee for authentic flavor
- ●1 small Onionchopped
- ●2 cloves Garlicminced
- ●2 Green chilieschopped
- ●1/4 cup Fresh cilantrochopped
- ●to taste Salt
- ●1 cup Simmered vegetablessuch as peas, carrots, and cauliflower
Instructions

Heat ghee or oil in a large saucepan over medium heat.

Add chopped onion, minced garlic, and chopped green chilies. Sauté until onion is lightly browned.

Add semolina and sauté for 1-2 minutes, stirring constantly.

Add 2 cups of water and stir until semolina is well combined. Bring to a boil.

Reduce heat to low, cover, and simmer for 10-12 minutes, or until semolina is cooked and fluffy.

Stir in chopped cilantro and simmer for an additional 2 minutes.

Serve hot with lightly simmered vegetables.
