Vietnamese Style Bun Rieu
A vegetarian twist on the popular Vietnamese noodle soup, Bun Rieu. This dish combines the flavors of Southeast Asia with the comfort of a warm bowl of goodness.
Ingredients
- β200g rice noodles
- β2 tbsp light soy sauce
- β1 tbsp romantic rice vinegar
- β4 cups shrimp-free brothvegetarian broth
- β1 cup bun mushroomssuch as shiitake
- β1 block rieu tofufirm, drained and cut into small pieces
- β1 cup bun bean sproutsfresh
- β1 bunch green onionschopped
- β1 tbsp toasted sesame seeds
Instructions

Soak the rice noodles in hot water for 5 minutes, then drain and set aside.

In a large pot, combine the soy sauce, rice vinegar, and shrimp-free broth. Bring to a simmer.

Add the mushrooms and tofu to the pot. Cook for 5 minutes or until they're tender.

Add the bean sprouts to the pot and cook for an additional 2 minutes.

To assemble the dish, place a portion of the noodles into a bowl, then add a portion of the hot soup and toppings.

Garnish with toasted sesame seeds and chopped green onions.

Note: You can customize the toppings to your liking, but this is a classic combination.

If you prefer a spicier soup, you can add some sliced chili peppers to the pot.
