Turkish Kunefe with Roasted Vegetables
A traditional Turkish dessert made with crispy kunefe and topped with a sweet and tangy mixture of roasted vegetables. This recipe is perfect for a warm evening treat.
Ingredients
- β1 package Kunefe pastry
- β1/4 cup Vegetable oil
- β1 cup Roasted eggplant
- β1 cup Roasted zucchini
- β1 cup Roasted red bell pepper
- β2 tablespoons Honey
- β2 tablespoons Lemon juice
- β1/2 cup Powdered sugar
- β1/4 cup Pistachios

Preheat the oven to 400Β°F (200Β°C).

Cut the eggplant, zucchini, and red bell pepper into 1-inch pieces and toss with 2 tablespoons of vegetable oil. Roast in the oven for 20-25 minutes, or until tender.

Cut the kunefe pastry into 1-inch pieces and fry in hot oil until crispy.

Combine the honey, lemon juice, and powdered sugar in a bowl and stir until smooth.

To assemble the dessert, place a few pieces of fried kunefe on a plate, then top with a spoonful of the honey-lemon mixture, followed by a spoonful of roasted vegetables. Repeat this process until all the ingredients are used up.
