Morcilla Tagine

- β1 pound, sliced Morcilla (Spanish Blood Sausage)
- β2 tablespoons Olive oil
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β1 teaspoon, ground Cumin
- β1 teaspoon, ground Coriander
- β1/2 teaspoon, smoked Paprika
- βto taste Salt
- βto taste Pepper
- βfor garnish Chopped fresh parsley

Heat the oil in the bottom of a clay or ceramic tagine pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic, cumin, coriander, and paprika. Cook for 1 minute.
