Portuguese Vegan Skewers
A delicious and flavorful vegan skewer dish inspired by Portuguese cuisine, featuring marinated vegetables and a hint of garlic.
Ingredients
- β200g Lightly marinated portobello mushrooms
- β2-3 Garlicky bell peppers
- β1 medium Onion
- β1 medium Zucchini
- β2-3 medium Red potatoes
- β4-5 cloves Garlic
- β2 tbsp chopped Fresh parsley
- β2 tbsp Olive oil
- β2 tbsp Lemon juice
- β1 tsp Chili flakes

Preheat the grill to medium-high heat.

Soak the skewers in water for at least 30 minutes before use.

In a large bowl, whisk together olive oil, lemon juice, garlic, chili flakes, salt, and pepper.

Thread the marinated vegetables onto the skewers, leaving some space between each piece.
