Italian-Style Semolina Empanadas
A unique twist on traditional Italian desserts, these semolina empanadas are fried to perfection and perfect for sweet treats.
Ingredients

- β1 cup all-purpose flourfor dusting
- β1/4 cup grated Parmesan cheese
- β1 large egg
- β1/4 cup sugar
- β1 tsp vanilla extract
- β4 tbsp melted butter
- β1/2 cup confectioners' sugarfor dusting

In a large mixing bowl, combine semolina, flour, Parmesan, egg, sugar, and vanilla extract.

Gradually add the melted butter and mix until a dough forms.

Knead the dough for 5-7 minutes until smooth.

Cover the dough and let it rest for 30 minutes.

Divide the dough into 8 equal pieces.

Roll each piece into a ball and flatten slightly into a disk shape.

Place a tablespoon of confectioners' sugar in the center of each disk.

Fold the dough over the filling to form a triangle and press the edges together to seal.
