Classic French Chicken Blanquette
A rich and creamy chicken dish that's a staple of French cuisine. Blanquette is a classic chicken recipe made with chicken, mushrooms, and cream.

- β1 medium onion
- β8 ounces mushrooms
- β4 tablespoons butter
- β2 tablespoons flour
- β2 cups chicken broth
- β1 cup heavy cream

Season the chicken with salt and pepper.

Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides and cooked through, about 5-6 minutes. Transfer the chicken to a plate and set aside.

Add the remaining 2 tablespoons of butter to the skillet. Add the onion and mushrooms and cook until the onion is translucent and the mushrooms are tender, about 5 minutes.

Sprinkle the flour over the onion and mushrooms and cook for 1-2 minutes.

Gradually add the chicken broth, whisking constantly to avoid lumps. Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 minutes.

Stir in the heavy cream and cook for an additional 2-3 minutes, or until the sauce has thickened slightly.

Return the chicken to the skillet and coat with the sauce. Simmer for an additional 2-3 minutes, or until the chicken is heated through.
