Avocado Flatbread Bruschetta
A simple and flavorful appetizer or snack featuring toasted flatbread topped with fresh avocado, lightly blanched vegetables, and a hint of herbs.
Ingredients
- β1 loaf (8-10 slices) flatbread
- β2 ripe avocados avocado
- β1 pint, lightly blanched tomatoCut into small pieces
- β1/2 medium, sliced cucumberPeel and seed before slicing
- β1/4 cup, thinly sliced red onion
- β1/4 cup, chopped fresh parsley
- βto taste salt
- β2 tablespoons balsamic vinegar

1. Preheat the oven to 400Β°F (200Β°C).

2. Slice the flatbread into 1-inch thick rounds.

3. Place the flatbread slices on a baking sheet and toast in the oven for 5-7 minutes, or until lightly browned.

4. Meanwhile, mash the avocado in a bowl and set aside.

5. Once the flatbread is toasted, let it cool for a minute or two before topping with mashed avocado.

6. Add the lightly blanched tomato, sliced cucumber, and thinly sliced red onion on top of the avocado.
