Thai-Style Chicken Stir Fry
Quick and flavorful stir fry made with chicken, vegetables, and fragrant Thai spices. Serve over steamed rice or noodles.
Ingredients
- β1 pound Gai (chicken breast)cut into bite-sized pieces
- β2 Mun (bell peppers)sliced
- β1 bunch Kao (bok choy)chopped
- β2 tablespoons Light (soy sauce)or to taste
- β1 tablespoon Thai (red curry paste)or to taste
- β1 cup Grain (brown rice)cooked according to package instructions
- β1 tablespoon vegetable oilfor cooking

Heat the oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the sliced bell peppers and chopped bok choy to the skillet and cook until tender, about 3-5 minutes.
