Syrian Vegetarian Tagine
A flavorful and aromatic vegetarian stew inspired by Syrian cuisine, made with tender vegetables and a rich spice blend.
Ingredients

- β1 large OnionChopped
- β2 medium CarrotsSliced
- β1 large Red Bell PepperSliced
- β1 medium ZucchiniSliced
- β1 can (14 oz) TomatoesCrushed
- β1 teaspoon Syrian Tagine Spice Blend
- β3 cloves GarlicMinced
- β1/4 cup Fresh CilantroChopped
- βto taste Salt

Heat the olive oil over medium heat in a large tagine or Dutch oven.

Add the chopped onion and cook until softened, about 5 minutes.

Add the sliced carrots, bell pepper, and zucchini. Cook for 5 minutes, stirring occasionally.

Add the crushed tomatoes, Syrian tagine spice blend, minced garlic, salt, and chopped cilantro.
