Roasted Chestnut Salad
A hearty, vegan salad featuring roasted chestnuts and a variety of greens.
Ingredients
- β1 cup chestnuts
- β4 cups mixed greens
- β2 tablespoons light vinaigrette
- β1/4 teaspoon smoked salt
- β1 cup salad
- β1/2 cup crushed french baguette
- β2 tablespoons maple syrup
- β1 tablespoon apple cider vinegar
- β1 tablespoon olive oil
- β1/4 teaspoon garlic powder

Preheat oven to 400Β°F (200Β°C).

Wrap chestnuts in foil and roast for 15-20 minutes, or until tender.

While chestnuts are roasting, prepare the vinaigrette by whisking together light vinaigrette, apple cider vinegar, maple syrup, and garlic powder in a small bowl.

In a large bowl, combine mixed greens, roasted chestnuts, and salad.

Drizzle the vinaigrette over the salad and toss to combine.

Sprinkle crushed french baguette and smoked salt over the top of the salad.
