Cornish Pasty Tofu Wrap
A twist on the classic Cornish pasty, filled with tofu and served in a crispy wrap.
Ingredients
- β1 block (200g) Tofu
- β2 wraps Cornish pastry wrapGluten-free
- β1 cup Lightly seasoned black beans
- β1 cup Roasted corn
- β1 cup Shredded cabbage
- β2 tbsp Smoky BBQ sauce
- β1/4 cup Chopped fresh cilantro

Preheat a non-stick pan over medium heat.

Wrap the Cornish pastry wraps in a damp cloth and warm them up in the microwave for 20 seconds.

Cut the tofu into small cubes and cook in the pan for 3-4 minutes, until golden brown.

Add the lightly seasoned black beans, roasted corn, and shredded cabbage to the pan and cook for a further 2-3 minutes.

Brush the smoky BBQ sauce over the tofu and bean mixture.

Warm the Cornish pastry wraps in the microwave for another 10 seconds.

Assemble the wraps by spooning the tofu and bean mixture onto the center of each wrap, followed by a sprinkle of chopped cilantro.

Fold the bottom half of the wrap up over the filling, then fold in the sides and roll up the wrap to form a tight cylinder.

Serve immediately and enjoy!
