German Potato Fritters
A classic German dish made with crispy potato fritters and a side of tangy applesauce. Perfect for a snack or light meal.
Ingredients

- β1 large peruvian potatoespeeled and grated
- β1 large gold potatoespeeled and grated
- β1 large yukon potatoespeeled and grated
- β1 package frittersfor coating

In a large bowl, combine the grated potatoes and 1/2 cup of water. Let it sit for 5 minutes to allow the potatoes to release their excess moisture.

Squeeze out as much water as possible from the potato mixture using a cheesecloth or a clean dish towel.

In a separate bowl, mix together the eggs, salt, and pepper.

Add the egg mixture to the potato mixture and stir until well combined.

Heat a large non-stick skillet or griddle over medium-high heat.

Using a 1/4 cup measuring cup, scoop the potato mixture into the skillet or griddle, flattening it slightly with a spatula.
