Japanese Pibil Chicken Ramen
A fusion twist on traditional ramen, featuring juicy pibil chicken and a light, savory broth.
Ingredients

- β1/2 cup light pibil marinade
- β1 tsp norteno spice blendor a mix of cumin, chili powder, and coriander
- β2 tbsp pibil paste
- β1 package ramen noodlespreferably fresh, not instant
- β1 bunch scallionschopped, for garnish
- β1 tsp sesame seedsoptional, for garnish
- β2 tbsp soy sauce
- β2 tbsp vegetable oil

In a blender or food processor, combine light pibil marinade, norteno spice blend, and pibil paste. Blend until smooth.

Place chicken breast in a shallow dish and pour the pibil marinade over it. Refrigerate for at least 2 hours or overnight.

Preheat a large pot of water to boiling. Cook ramen noodles according to package instructions. Drain and set aside.

In a large skillet or wok, heat vegetable oil over medium-high heat. Remove chicken from marinade and cook until browned, about 5-6 minutes per side.

Transfer chicken to a plate and let rest. In the same skillet, add soy sauce and cook for 1 minute, scraping up any browned bits.

Add cooked ramen noodles to the skillet and toss to coat with soy sauce.

Slice cooked chicken into thin strips and add to the noodles. Toss to combine.
