Kenyan Vegetable Bake
A flavorful and healthy vegetable bake inspired by Kenyan cuisine, perfect for a weeknight dinner.
Ingredients
- β2 large Sweet potatoes
- β4 medium Carrots
- β1 large Zucchini
- β2 large Bell peppers
- β1 large Onions
- β2 tbsp Light olive oil
- β2 tbsp Tomato paste
- β1 tsp Bake seasoning

Preheat oven to 400Β°F (200Β°C).

Peel and chop the sweet potatoes, carrots, zucchini, and bell peppers into 1-inch pieces.

Heat the olive oil in a large skillet over medium heat. Add the onions and cook until softened, about 5 minutes.

Add the tomato paste to the skillet and cook for 1-2 minutes, stirring constantly.

Transfer the vegetable mixture to a 9x13 inch baking dish. Top with chopped sweet potatoes, carrots, zucchini, and bell peppers.

Sprinkle the bake seasoning over the top of the vegetables.

Bake for 30-40 minutes, or until the vegetables are tender and lightly browned.
